Discover seven different flavours of chocolate and the history of Lindt while enjoying a decadent taste experience and a demonstration from the Lindt maitre on how to create Lindor Lollies
 | | | | Swiss Roulades Roulades are fun, easy and a creative way to combine many flavours & textures into rolled up sponge cakes utilizing crèmes & sponges
This class will show you how to assemble & decorate a variety of flavours & textures
 | | | | Toffees & fudges Toffees & Fudges workshop will give you an insight into making these sweet treats at home incorporating Lindt chocolate, four simple recipes which will be made by the participants in groups
all fudges & toffees made will be portioned to be taken & enjoyed at home.

MASTER CLASSES | Art of Classic cakes Another selection of classical cakes & pastries with a modern twist of presentation.
Showcasing recipes & techniques to create a professional range of cakes for pastry shops & special occasions.
The items will be created by group participation lead by the maitre chocolatier.
 | | | | Confectionery bars (layers & textures) A new & challenging class which will showcase making of chocolate bars with layers & textures
Incorporating nougats, fudges, jellies & enrobing in tempered lindt chocolate
 | | | | The Art of Macaroon making Macaroons have become a world trend in the past several years, these little gems need attention & patience to perfect.
We provide two recipe methods the hot method & then the cold method to make a selection of flavours /colours & textures.
The participants will get to make & pipe the macaroons in groups.
Providing the essential “secret tips”to creating perfect macaroons a smooth even top , a lace or foot & soft moist centre with a thin crisp full shell are all marks of a successful macaroon.
 | | | | Art of Mousse cakes Professional finishes to mousse based cakes, made in the style of French boutique pastry shops.
Various recipes & techniques such as spraying, glazing, and the use of transfer sheets & sponge collars to create modern cakes.
All cakes made by the participants will be boxed up to take home.
 | | | | Decor – entry level This workshop is aimed at the entry level participant, where no previous knowledge of chocolate decorations & tempering is known , focus will be on tempering & fundamentals such as spreading, cutting & piping.
It is recommended first to complete the entry level before attempting the advanced decor class.
Bean to bar , tempering & basic techniques focusing on developing confidence & skill.
 | | | | Decor – advanced Focusing on building on from the entry level class, two methods of tempering will be demonstrated. Participants will then temper their own chocolate by seeding method
Advanced decor items which will allow the participant to further their skills & techniques. Incorporating techniques on various plastics, granite & frozen techniques.
 | | | | Swiss tradition - Chocolate confectioneryChocolate confectionery covers a wide selection of items which either contain or can be used as centers for chocolate enrobing.
Understanding the techniques & methods utilized to create many of the famous confectionery items we all know & love.
The maitre chocolatiers will guide & explain the preparations with group participation voluntary.
 | | | | Swiss tradition –old fashioned sweets Learn the techniques used to create a variety of old fashioned sweets formed into new flavours & styles.
Participants will cover a selection of products, portioned & packaged to take home.
 | | | | Hand crafted truffles Learn to create your own hand crafted truffles, these little gems are the chocolatiers playground, flavour & texture combinations are endless & left to the imagination.
In this workshop we have given a section of techniques & base recipes using fresh cream, butter or praline paste.
You will be able to be part of the process from start to finish.
 | | | | Les Grande tarts & tortes Tarts & tortes will cover a selection of some better know & some lesser know tarts, showcasing a variety of recipe methods to create tarts of various textures & flavours.
Tarts will be made in individual size portions for all participants to take home.
 | | | | Classical Boutique pastries In this workshop the participants can experience the making of mini pastries in the style of what you would find in afternoon tea selections in hotels around the world.
Some classical preparations with new interpretations these recipes will provide a good foundation to impress your friends & family.
 | | | | Petit fours & friandise In this workshop we focus on the preparation & finish of the petit fours / friandise, providing a selection of recipes & techniques utilizing the Lindt chocolate selection.
 | | | | Advanced Moulding & FillingsBuild onto your existing knowledge of moulding & fillings ,where we will show you to layer airbrush & incorporate texture into you fillings , we will also cover liquid fillings
Understand & Learn the technique of moulding & filling with polycarbonate moulds.
Prepare various fillings of different textures & flavours for inclusion into individual & bar chocolates.
All the techniques will be demonstrated by the chocolatier & then the participants will get the oppourtunity to mould, decorate & fill their own chocolates , all chocolates made will be boxed up to be taken home & enjoyed.
 | | | | Showpiece creationA fun & hands on class in making of “the nutcracker” out of solid Lindt chocolate.
Showing how chocolate can be transformed into a dough like paste to be shaped & formed.
Techniques of tempering, moulding & modelling will be shown.
All showpieces completed will be boxed up & taken home by the participants.
