Lindt cookie pizza bake-upCreate your very own unique Lindt Cookie Pizza that you can take home with you. The Lindt chocolatiers will give a brief background to the History of Chocolate and a tour of the Studio. They will demonstrate a quick run through on making cookie dough – them receiving the end result, the dough! Then we will allow your child to create & make their very own individually decorated Lindt Cookie Pizza packaged to take home & enjoy & maybe share!
 
Where did my chocolate come from? Bean to Bar – kiddies styleWhere did my Chocolate come from? is a wonderful way to learn about chocolate. Children are given a tour and a modified version of the history of Chocolate. See chocolate in different forms and see how the process takes place.
 
Lindt bunny makingCreate your very own unique Lindt Chocolate Bunny that you can take home with you. The Lindt chocolatiers will give a tour of the Studio and a modified History of Chocolate.
 

MASTER CLASSES

Art of mousses cakes Professional finishes to mousse based cakes, made in the style of French boutique pastry shops. Various recipes & techniques such as spraying, glazing, and the use of transfer sheets & sponge collars to create modern cakes. All cakes made by the participants will be boxed up to take home.
 
Art of the macaron Macaroons have become a world trend in the past several years, these little gems need attention & patience to perfect. We provide two recipe methods the hot method & then the cold method to make a selection of flavours /colours & textures. The participants will get to make & pipe the macaroons in groups. Providing the essential “secret tips”to creating perfect macaroons a smooth even top , a lace or foot & soft moist centre with a thin crisp full shell are all marks of a successful macaroon.
 
Art of classical cakes Another selection of classical cakes & pastries with a modern twist of presentation. Showcasing recipes & techniques to create a professional range of cakes for pastry shops & special occasions. The items will be created by group participation lead by the maitre chocolatier.
 
Decor – entry level This workshop is aimed at the entry level participant, where no previous knowledge of chocolate decorations & tempering is known , focus will be on tempering & fundamentals such as spreading, cutting & piping. It is recommended first to complete the entry level before attempting the advanced decor class. Bean to bar , tempering & basic techniques focusing on developing confidence & skill.
 
Decor – advanced Focusing on building on from the entry level class, two methods of tempering will be demonstrated. Participants will then temper their own chocolate by seeding method Advanced decor items which will allow the participant to further their skills & techniques. Incorporating techniques on various plastics, granite & frozen techniques.
 
Swiss tradition – chocolate confectionery Chocolate confectionery covers a wide selection of items which either contain or can be used as centers for chocolate enrobing. Understanding the techniques & methods utilized to create many of the famous confectionery items we all know & love. The maitre chocolatiers will guide & explain the preparations with group participation voluntary.
 
Hand crafted truffles Learn to create your own hand crafted truffles, these little gems are the chocolatiers playground, flavour & texture combinations are endless & left to the imagination. In this workshop we have given a section of techniques & base recipes using fresh cream, butter or praline paste. You will be able to be part of the process from start to finish.
 
Les Grande tarts & tortes Tarts & tortes will cover a selection of some better know & some lesser know tarts, showcasing a variety of recipe methods to create tarts of various textures & flavours. Tarts will be made in individual size portions for all participants to take home.
 
Classical boutique pastries In this workshop the participants can experience the making of mini pastries in the style of what you would find in afternoon tea selections in hotels around the world. Some classical preparations with new interpretations these recipes will provide a good foundation to impress your friends & family.
 
Moulding & fillings Learn to prepare Lindt couvertures for moulding by tempering of the chocolate. Understand & Learn the technique of moulding & filling with polycarbonate moulds. Prepare various fillings of different textures & flavours for inclusion into individual & bar chocolates.
 
Seasons dessert selection This workshop focuses on chocolate paired together with seasonal produce to create modern classic chocolate desserts.
